Chopped Kale Salad

Kale, carrot, cucumber, red onion, soybean, cilantro, sesame seed and miso-ginger vinaigrette

Our chopped kale salad is finely chopped and served with freshly sliced cucumbers and carrots. Soybeans add a satisfying bite and protein while the onions complement with a little extra crunch and heat. We prepare a miso-ginger vinaigrette in house which brings all of these components together with hints of rice wine vinegar and fresh, raw ginger. Toasted sesame seeds finish this salad adding a nutty flavor. Consider adding grilled Ahi tuna steak.

Caesar Salad

Chopped green leaf lettuce, grated Parmesan, crispy jalapeños, garlic and parmesan bread with Larkspur’s Caesar dressing

This classic salad has been a guest favorite since its inception at Larkspur Restaurant in Vail, CO over a decade ago. The Caesar dressing is both creamy and balanced and is made from whole cloves of garlic, anchovies, capers and fresh squeezed lemon juice. At Larkburger, we gave the classic Caesar an extra kick with crispy jalapeño rounds, and garlic-herb parmesan bread croutons, made from Udi’s® gluten free bread.  We recommend you add an all-natural, adobo grilled chicken breast.

Rocket Power Salad

Tomato quinoa, sliced vegetables and chickpeas

Organic power greens and rocket blend together as the fuel for this salad. Blanched baby carrots create a flavorful, tender bite. Toasted tomato quinoa provides a nutty flavor as well as protein. Sliced vegetables including cucumber and red onions create great crunch and some pleasant spice.  Our chickpeas bring the perfect added texture. Marrying all of these flavors together is our house vinaigrette which is a classic French dressing with hints of sherry vinegar and Dijon mustard.

Add chicken or seared Ahi tuna.
