It all started with a burger and a world-class restaurant in Vail, Colorado and our chef Thomas Salamunovich.
If Vail is the culinary center of the Rocky Mountains, you can give some credit to Thomas Salamunovich. The list of Vail restaurants he’s started or currently runs is exhaustive: Sweet Basil, Zino, Larkspur Restaurant and Market (where he invented the Larkburger), Restaurant Avondale and Avondale Market, Food and Beverage at the Westin Riverfront Resort, Centre V restaurant, Food and Beverage at the Arabelle hotel, Silver Sage and Summerthyme restaurants, and all Food and Beverage at Red Sky Ranch.
After graduating from the California Culinary Academy, Thomas found himself at the center of a food revolution in San Francisco. For the next seven years, he was lucky enough to study under both Jeremiah Towers at Stars and later Wolfgang Puck at Postrio Restaurant, where he continually refined his New American cuisine.
He continued to work and learn in the kitchens of three-star French restaurants including Paul Bocuse in Lyon and Lucas Carton in Paris, as well as Elysee Lenôtre in Paris and the world-famous bakery Poilane Boulangerie.
If there’s a perfect burger out there, Thomas is on a never-ending quest to find it.
